g2userLoneWlf794: copy the data to temporary storage, rebuild at desired raid level and copy the data back :/. I'm assuming you're talking linux software raid and I don't think there's any way to just modify the raid level from 0 to 1.

They two disks I'm using are 36.4GB SCSI's.
